Multi-purpose is the name of the game, and if you sling chicken, pork, fish or veggies - and you need one to rule them all - go with this. This blend delivers subtle, warming notes that work deep into the food and round out taste.
Flavor Profile
- This blend is overweight on top-notes, such as citrus, herb and low levels of tart. You get hefty, forward flavor that lets the back-half of the bite be defined by the underlying food
- For chicken, this blend stands up to heat and easily permeates during extended cooking. For any method, you'll get results.
- For pork, the blend plays into its sweet and floral notes. With lean cuts, its going to bring forward the meat. On other cuts, fat content will spread the spice blend around the mouth and add layer to the bite.
- On fish (if salted and allowed to rest before cooking) the salt content will firm the fillet, accentuate the flakiness, and make it pop. Notes of conifer will emerge, giving it a wacky twist.
- If applied to food 30 minutes before cooking, the salt in the blend will melt into the ingredient, leaving top heavy notes that hit the eater on the first bite - then swim away gently.
